Crockpot Greek Chicken

Description

A delicious and easy recipe for Greek chicken made in a crockpot, perfect for a hassle-free dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add cherry tomatoes, Kalamata olives, and feta cheese on top of the chicken.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  4. Pour the olive oil mixture over the chicken and vegetables in the crockpot.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Once cooked, shred the chicken with two forks and mix everything together before serving.

Notes

  • Serve with rice or pita bread for a complete meal.
  • Can be stored in the refrigerator for up to 3 days.
  • Feel free to add more vegetables like bell peppers or zucchini.
