- 4 boneless, skinless chicken breasts
- 1 cup cherry tomatoes
- 1/2 cup Kalamata olives, pitted
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 teaspoons dried oregano
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the crockpot.
- Add cherry tomatoes, Kalamata olives, and feta cheese on top of the chicken.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour the olive oil mixture over the chicken and vegetables in the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix everything together before serving.
