Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 block (8 oz) cream cheese
  • 1 cup chicken broth
  • 1 cup shredded cheese (optional)


Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the black beans, corn, diced tomatoes, and taco seasoning on top of the chicken.
  3. Pour the chicken broth over the ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, add the cream cheese to the crockpot.
  6. Shred the chicken with two forks and stir everything together until well combined.
  7. Serve hot, topped with shredded cheese if desired.

Notes

  • For a spicier chili, add jalapeños or hot sauce.
  • This recipe can be made ahead and stored in the refrigerator for up to 3 days.
