Ingredients

- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup dill pickle slices
- 1/2 cup breadcrumbs
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1 egg
- Salt and pepper to taste
- Oil for frying
Instructions
- Mix together the cheddar cheese, mozzarella cheese, garlic powder, paprika, salt, and pepper in a bowl.
- Take a dill pickle slice and place a small amount of the cheese mixture on top, then sandwich with another pickle slice.
- Dip the pickle sandwiches into the egg, then coat with breadcrumbs.
- Heat oil in a frying pan over medium heat.
- Fry the pickle bites until golden brown and crispy, about 2-3 minutes per side.
- Drain on paper towels and serve hot.
Notes
For extra crunch, double bread each pickle sandwich by dipping in egg and breadcrumbs twice.
