- 2 medium eggplants, sliced
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the eggplants and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
- Rinse and pat dry the eggplant slices.
- In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
- Coat each eggplant slice with the breadcrumb mixture.
- Place the coated slices on a baking sheet and spray lightly with olive oil.
- Bake for 25-30 minutes until golden brown and crispy.
- In a baking dish, layer marinara sauce, baked eggplant, and mozzarella cheese. Repeat layers.
- Bake for an additional 20 minutes until the cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
- For extra flavor, add fresh basil between the layers.
- Can be made ahead and reheated in the oven.
