Ingredients

Scale
  • 2 medium eggplants, sliced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil spray


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplants and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
  3. Rinse and pat dry the eggplant slices.
  4. In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
  5. Coat each eggplant slice with the breadcrumb mixture.
  6. Place the coated slices on a baking sheet and spray lightly with olive oil.
  7. Bake for 25-30 minutes until golden brown and crispy.
  8. In a baking dish, layer marinara sauce, baked eggplant, and mozzarella cheese. Repeat layers.
  9. Bake for an additional 20 minutes until the cheese is bubbly.
  10. Let it cool for a few minutes before serving.

Notes

  • For extra flavor, add fresh basil between the layers.
  • Can be made ahead and reheated in the oven.
