A heartwarming casserole filled with winter vegetables and a creamy sauce, perfect for cold days.
Ingredients

- 2 cups of broccoli florets
- 2 cups of cauliflower florets
- 1 cup of carrots, sliced
- 1 cup of green beans, trimmed
- 1 cup of mushrooms, sliced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 cups of heavy cream
- 1 cup of grated cheese (cheddar or your choice)
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of dried thyme
- 1 tablespoon of olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the broccoli, cauliflower, carrots, and green beans to the skillet and cook for about 5 minutes.
- Stir in the mushrooms, salt, pepper, and thyme, and cook for another 3 minutes.
- In a separate bowl, mix the heavy cream and half of the cheese together.
- Combine the vegetable mixture with the cream mixture and stir well.
- Transfer the mixture to a greased baking dish and top with the remaining cheese.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add or substitute any seasonal vegetables you have on hand.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
- For a lighter version, you can use low-fat cream or milk.
