Description

A heartwarming casserole filled with winter vegetables and a creamy sauce, perfect for cold days.


Ingredients

  • 2 cups of broccoli florets
  • 2 cups of cauliflower florets
  • 1 cup of carrots, sliced
  • 1 cup of green beans, trimmed
  • 1 cup of mushrooms, sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 cups of heavy cream
  • 1 cup of grated cheese (cheddar or your choice)
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of dried thyme
  • 1 tablespoon of olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the broccoli, cauliflower, carrots, and green beans to the skillet and cook for about 5 minutes.
  4. Stir in the mushrooms, salt, pepper, and thyme, and cook for another 3 minutes.
  5. In a separate bowl, mix the heavy cream and half of the cheese together.
  6. Combine the vegetable mixture with the cream mixture and stir well.
  7. Transfer the mixture to a greased baking dish and top with the remaining cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  9. Let it cool for a few minutes before serving.

  • Feel free to add or substitute any seasonal vegetables you have on hand.
  • This casserole can be made ahead of time and stored in the refrigerator before baking.
