Description

A delightful vegan pasta dish featuring a creamy pink sauce made from cashews and cherry tomatoes.


Ingredients

Scale
  • 8 ounces of pasta (your choice)
  • 1 cup of cashews (soaked)
  • 1 cup of cherry tomatoes
  • 1/2 cup of nutritional yeast
  • 2 cloves of garlic
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • Fresh basil (for garnish)


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Combine in a blender: soaked cashews, cherry tomatoes, nutritional yeast, garlic, olive oil, salt, and pepper. Blend until smooth and creamy.
  3. Mix the cooked pasta with the creamy sauce in a large mixing bowl, tossing to coat evenly.
  4. Serve warm, garnished with fresh basil.

Notes

Soak cashews for at least 4 hours for a creamier texture. Adjust seasoning to taste.
