- 1 lb boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 4 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery, and sauté until softened.
- Add minced garlic and cook for an additional minute.
- Stir in the chicken breasts and cook until browned on all sides.
- Add chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
- Remove chicken, shred it, and return it to the pot.
- Add rice and simmer for another 15 minutes until rice is cooked.
- Stir in heavy cream and season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- This soup can be made in advance and stored in the refrigerator for up to 3 days.
