Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery, and sauté until softened.
  2. Add minced garlic and cook for an additional minute.
  3. Stir in the chicken breasts and cook until browned on all sides.
  4. Add chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. Remove chicken, shred it, and return it to the pot.
  6. Add rice and simmer for another 15 minutes until rice is cooked.
  7. Stir in heavy cream and season with salt and pepper.
  8. Garnish with fresh parsley before serving.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • This soup can be made in advance and stored in the refrigerator for up to 3 days.
