A delightful and creamy pasta salad featuring rotini, fresh tomatoes, mozzarella, and a rich dressing.
Ingredients

- 8 ounces of rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella balls, halved
- 1/2 cup fresh basil leaves, chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Boil a large pot of salted water and add the rotini pasta.
- Cook until al dente, about 8-10 minutes, stirring occasionally.
- Drain the pasta and rinse it under cold water to stop the cooking process.
- Combine the cooked pasta, halved cherry tomatoes, mozzarella balls, and chopped basil in a large bowl.
- Mix mayonnaise, sour cream, balsamic vinegar, salt, and pepper in a separate bowl until well blended.
- Pour the dressing over the pasta mixture and toss until everything is evenly coated.
- Cover the salad and chill in the refrigerator for at least 30 minutes for the flavors to meld.
- Serve the salad cold, garnished with extra basil if desired.
Notes
For a heartier version, consider adding grilled chicken or more vegetables. Store in an airtight container for up to 3 days.
