Description

A creamy and delicious potato soup enriched with cream cheese for a rich flavor.


Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 8 oz cream cheese, softened
  • 1 cup milk
  • Salt and pepper to taste
  • Chopped chives for garnish


Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the diced potatoes and broth, bringing to a boil.
  3. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Use a potato masher to mash the potatoes slightly for a thicker texture.
  5. Stir in the cream cheese and milk until well combined and creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped chives.

Notes

  • For a vegetarian version, use vegetable broth.
  • Adjust the thickness by adding more or less milk.
