Description

Deliciously soft and minty cookies made with cream cheese.


Ingredients

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder

  • 1/2 teaspoon peppermint extract
  • 1/2 cup powdered sugar (for dusting)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened cream cheese and butter until smooth.
  3. Add the granulated sugar, egg, and vanilla extract, and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Stir in the peppermint extract.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on a wire rack, then dust with powdered sugar before serving.
