Ingredients

  • 3-4 lbs beef roast
  • 1 cup cranberry sauce
  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh rosemary for garnish


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the cranberry sauce, balsamic vinegar, brown sugar, minced garlic, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned.
  4. Place the seared roast in a roasting pan and pour the cranberry balsamic mixture over it.
  5. Cover the pan with foil and roast in the preheated oven for about 2 hours, or until the internal temperature reaches your desired doneness.
  6. Remove the roast from the oven and let it rest for 15 minutes before slicing.
  7. Garnish with fresh rosemary and serve with your favorite sides.
