Ingredients

- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1 jalapeño, seeded and diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lime juice
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Combine in a large bowl the black beans, corn, bell pepper, red onion, jalapeño, cherry tomatoes, cilantro, and avocado.
- Whisk together in a separate small bowl the olive oil, red wine vinegar, lime juice, cumin, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
- Enjoy as an appetizer or side dish!
