- 1 cup Cottage Cheese
- 1/2 cup Honey or Maple Syrup
- 1 teaspoon Vanilla Extract
- 1 large Egg
- 2 cups Oats
- 1 teaspoon Baking Powder
- 1 teaspoon Spices (optional)
- 1/2 cup Chocolate Chips
- 1/2 cup Nuts (chopped)
- 1/2 cup Dried Fruits
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix the cottage cheese and honey (or maple syrup) until smooth.
- Add the vanilla extract and egg (or flax egg) to the mixture and blend well.
- Combine the oats, baking powder, and spices (if using) in another bowl.
- Gradually add the dry mixture to the wet ingredients, stirring until fully combined.
- Fold in the chocolate chips, nuts, and dried fruits until evenly distributed.
- Scoop the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Notes
For a sugar-free version, consider using stevia, monk fruit, or allulose instead of honey or maple syrup.
