Ingredients

- 6 large eggs
- 1 cup whole milk cottage cheese
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1/2 cup grated cheese (optional)
- Choice of vegetables and proteins (up to 1 cup total)
Instructions
- Preheat oven to 350°F.
- Spray a 9-inch baking dish with oil.
- Blend eggs, cottage cheese, salt, and pepper in a blender or food processor until smooth.
- Stir in grated cheese and your choice of vegetables/proteins.
- Mix thoroughly and pour into the prepared baking dish.
- Bake for about 45 minutes or until the center is set and edges are golden brown.
- Allow to cool slightly before slicing and serving.
Notes
Store leftovers in an airtight container for up to 3 days. Freeze slices for up to 3 months.
