Instructions

  1. Combine in a microwave-safe mug cottage cheese, egg, almond flour, maple syrup, vanilla extract, ground cinnamon, baking powder, and salt; mix until smooth.
  2. In a small bowl, mix 1 teaspoon of maple syrup with 0.25 teaspoon of cinnamon; dollop into the center of the batter and swirl gently.
  3. Microwave on high for 60 to 90 seconds until set and slightly puffed.
