- 2 pounds corned beef brisket (pre-cooked or deli-style slices)
- 12 soft dinner slider buns (potato rolls preferred)
- 12 slices Swiss cheese
- 3 tablespoons Dijon mustard
- 3 tablespoons unsalted butter
- 1 cup pickles or sauerkraut (optional)
- 1 teaspoon caraway seeds (optional)
Instructions
- Slow-cook raw corned beef brisket with pickling spices and water for 150-180 minutes until fork tender; then shred or slice thinly. If pre-cooked, slice thinly against the grain.
- Preheat oven to 350°F (175°C) and line a baking sheet with foil or parchment paper.
- Melt butter gently and stir in caraway seeds if using.
- Slice slider buns in half horizontally if not pre-sliced.
- Place bottom halves on the baking sheet.
- Spread a thin layer of Dijon mustard on each bottom bun.
- Pile sliced corned beef generously on each bun, then top with a slice of Swiss cheese.
- Add pickles or sauerkraut if desired.
- Place the top bun halves on the sliders.
- Brush the tops of the slider buns with the melted butter mixture.
- Bake in the oven for 10-15 minutes until cheese is melted and buns are toasted.
- Serve warm and enjoy.
