Description

A delicious and hearty corned beef hash recipe perfect for breakfast or brunch.


Ingredients

  • 2 cups cooked corned beef, diced
  • 2 cups potatoes, peeled and diced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 eggs (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced potatoes and cook until they start to soften, about 10 minutes.
  3. Add the chopped onion and continue to cook until the onion is translucent.
  4. Stir in the diced corned beef and cook until heated through and crispy, about 5-7 minutes.
  5. Season with salt and pepper to taste.
  6. If using, fry the eggs in a separate pan to your liking and serve on top of the hash.

  • For extra flavor, add bell peppers or spices of your choice.
