Instructions
- In a mixing bowl, combine mascarpone cheese, heavy cream, sugar, and vanilla extract. Whip until smooth and creamy.
- Dip each ladyfinger into the coquito quickly, ensuring they are soaked but not soggy.
- Layer the soaked ladyfingers in a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Add another layer of soaked ladyfingers on top.
- Spread the remaining mascarpone mixture over the second layer of ladyfingers.
- Cover and refrigerate for at least 4 hours, preferably overnight.
