Description

A traditional Irish dish made with mashed potatoes, cabbage, and crispy bacon.


Ingredients

Scale
  • 2 pounds potatoes, peeled and cubed
  • 4 cups chopped cabbage
  • 4 slices of bacon, chopped
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and pepper to taste


Instructions

  1. In a large pot, boil the potatoes until tender, about 15-20 minutes.
  2. While the potatoes are cooking, fry the bacon in a skillet until crispy. Remove and set aside, leaving the drippings in the pan.
  3. Add the chopped cabbage to the skillet with the bacon drippings and sauté until tender, about 5-7 minutes.
  4. Drain the potatoes and return them to the pot. Add the milk, butter, salt, and pepper, and mash until smooth.
  5. Fold in the sautéed cabbage and crispy bacon into the mashed potatoes.
  6. Serve hot, garnished with additional butter if desired.

  • For a creamier texture, add more milk.
  • Feel free to substitute kale for cabbage if preferred.
