Description
A traditional Irish dish made with mashed potatoes, cabbage, and crispy bacon.
Ingredients
Scale
- 2 pounds potatoes, peeled and cubed
- 4 cups chopped cabbage
- 4 slices of bacon, chopped
- 1/2 cup milk
- 4 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, boil the potatoes until tender, about 15-20 minutes.
- While the potatoes are cooking, fry the bacon in a skillet until crispy. Remove and set aside, leaving the drippings in the pan.
- Add the chopped cabbage to the skillet with the bacon drippings and sauté until tender, about 5-7 minutes.
- Drain the potatoes and return them to the pot. Add the milk, butter, salt, and pepper, and mash until smooth.
- Fold in the sautéed cabbage and crispy bacon into the mashed potatoes.
- Serve hot, garnished with additional butter if desired.

Notes
- For a creamier texture, add more milk.
- Feel free to substitute kale for cabbage if preferred.
- This dish can be made ahead and reheated before serving.
