- 4 large eggs
- 1/4 cup blue cheese, crumbled
- 4 slices of bacon
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the bacon in a skillet until crispy, then crumble and set aside.
- Separate the egg whites from the yolks, placing the whites in a mixing bowl.
- Whip the egg whites until stiff peaks form.
- Gently fold in the crumbled blue cheese and season with salt and pepper.
- On a baking sheet lined with parchment paper, spoon the whipped egg whites into cloud shapes.
- Make a small indentation in the center of each cloud and carefully place an egg yolk in each.
- Bake in the preheated oven for about 10-12 minutes, or until the egg whites are golden and the yolks are set to your liking.
- Remove from the oven, sprinkle with crumbled bacon, and serve immediately.
Notes
- For a lighter version, you can omit the bacon or use turkey bacon.
