Description

Ingredients

  • 1 ½ cups old-fashioned oats
  • ½ cup almond flour
  • ¼ cup maple syrup
  • ¼ cup melted coconut oil
  • 1 ½ teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup chopped pecans (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix together mashed sweet potato, maple syrup, melted coconut oil, and vanilla extract in a large bowl until smooth.
  3. Add oats, almond flour, cinnamon, nutmeg, baking powder, and salt. Stir until a sticky dough forms.
  4. Fold in chopped pecans if using.
  5. Scoop dough into rounded tablespoons and place on the prepared baking sheet. Flatten slightly.
  6. Bake for 14–16 minutes until the edges are golden and the centers are set.
  7. Let cool on the pan for 5 minutes before transferring to a wire rack.
