Description

A fresh, vibrant salad featuring fluffy quinoa tossed with chopped vegetables and a zesty lime dressing.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/2 red onion, diced


Instructions

  1. Rinse the quinoa under cold water. In a medium pot, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed.
  2. In a small bowl, whisk together lime juice, olive oil, garlic powder, salt, and pepper.
  3. Combine cooked quinoa, cilantro, cherry tomatoes, cucumber, and red onion in a large bowl.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve chilled or at room temperature.

Notes

Chill the salad for at least 30 minutes before serving to allow the flavors to meld beautifully. Store in the refrigerator for up to three days.
