A vibrant and refreshing pasta salad infused with lime and cilantro, perfect for summer gatherings.
Ingredients

- 8 oz pasta (farfalle or rotini)
- 1 cup cherry tomatoes, halved
- 1 cup corn (fresh or frozen)
- 1/2 cup red onion, diced
- 1/2 cup cilantro, chopped
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
- Crushed red pepper flakes (optional)
Instructions
- Cook the pasta according to package instructions. Drain and let it cool.
- Combine in a large bowl the cooked pasta, cherry tomatoes, corn, red onion, and cilantro.
- Whisk together in a small bowl the lime juice, olive oil, garlic powder, salt, and pepper.
- Pour the dressing over the pasta salad and stir to combine.
- Add crushed red pepper flakes if desired for heat.
- Chill in the refrigerator for about 30 minutes before serving. Enjoy!
Notes
For variations, consider adding avocado or black beans. Store in an airtight container for up to 4 days.
