Instructions

  1. Prepare the dough: In a mixing bowl, combine warm milk and granulated sugar. Sprinkle in the active dry yeast and let it sit for about 5 minutes until frothy.
  2. Add eggs: Beat in the eggs and softened unsalted butter.
  3. Mix dry ingredients: In another bowl, whisk together the all-purpose flour and salt.
  4. Combine mixtures: Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  5. Knead: Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
  6. First rise: Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for about an hour, or until doubled in size.
  7. Make the filling: In a bowl, mix brown sugar, cocoa powder, and espresso powder. Set aside.
  8. Roll and fill: Punch down the risen dough and roll it out into a rectangle (about ¼ inch thick). Spread the softened butter over the dough, then sprinkle the filling evenly across the surface.
  9. Shape the rolls: Roll the dough tightly from the long side, and cut it into 12 equally-sized rolls.
  10. Second rise: Place the rolls in a greased baking dish, cover, and let them rise again for about 30-45 minutes.
  11. Bake: Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes or until golden brown.
  12. Make the glaze: While the rolls are baking, whisk together powdered sugar, milk (or cream), vanilla extract, and optional espresso powder in a bowl until smooth.
  13. Finish and serve: Drizzle the glaze over the warm rolls and let it set for a few minutes before serving.
