Ingredients

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Fold in the chopped strawberries gently into the batter.
  6. Fill the cupcake liners about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let the cupcakes cool completely.
  9. In a saucepan, heat the heavy cream until just simmering, then pour it over the chocolate chips in a bowl. Let it sit for a few minutes, then stir until smooth.
  10. Dip the cooled cupcakes into the chocolate ganache, allowing excess to drip off.
  11. Top with additional strawberries if desired.
