Description

Ingredients

  • 3 ½ cups All-purpose flour
  • 1 cup Whole milk (cold)
  • 1 tbsp Active dry yeast
  • ¼ cup Granulated sugar
  • 1 ½ tsp Fine salt
  • 1 cup Unsalted butter (cold)
  • 12 bars Dark or semi-sweet chocolate
  • Optional: Milk or white chocolate
  • 1 Egg, beaten
  • 1 tbsp Water
  • Optional: 1 tbsp Sugar


Instructions

  1. Mix flour, yeast, sugar, salt, and cold milk until the dough comes together.
  2. Knead lightly until smooth, then wrap in plastic and refrigerate overnight.
  3. Shape cold butter into a flat rectangle between parchment paper and chill until firm.
  4. Roll out the chilled dough into a large rectangle.
  5. Place the butter block in the center and fold the dough like a letter around it.
  6. Roll gently to flatten the dough and refrigerate for 30 minutes.
  7. Repeat the rolling and folding process one more time.
  8. Chill overnight.
  9. Preheat the oven, shape the croissants, fill with chocolate, and bake until golden brown.

Notes

For a glossy finish, brush croissants with an egg wash before baking. Use high-quality chocolate for the best flavor.
