Ingredients

- 3 ½ cups All-purpose flour
- 1 cup Whole milk (cold)
- 1 tbsp Active dry yeast
- ¼ cup Granulated sugar
- 1 ½ tsp Fine salt
- 1 cup Unsalted butter (cold)
- 12 bars Dark or semi-sweet chocolate
- Optional: Milk or white chocolate
- 1 Egg, beaten
- 1 tbsp Water
- Optional: 1 tbsp Sugar
Instructions
- Mix flour, yeast, sugar, salt, and cold milk until the dough comes together.
- Knead lightly until smooth, then wrap in plastic and refrigerate overnight.
- Shape cold butter into a flat rectangle between parchment paper and chill until firm.
- Roll out the chilled dough into a large rectangle.
- Place the butter block in the center and fold the dough like a letter around it.
- Roll gently to flatten the dough and refrigerate for 30 minutes.
- Repeat the rolling and folding process one more time.
- Chill overnight.
- Preheat the oven, shape the croissants, fill with chocolate, and bake until golden brown.
Notes
For a glossy finish, brush croissants with an egg wash before baking. Use high-quality chocolate for the best flavor.
