Ingredients

  • 2 large eggs

  • 2 tsp vanilla extract
  • 1 cup strawberries, chopped
  • 1 cup butter, softened
  • 4 cups powdered sugar
  • 2 tbsp heavy cream
  • ½ cup chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.
  4. Combine the wet and dry ingredients, mixing until just combined. Fold in the chopped strawberries.
  5. Divide the batter evenly among the cupcake liners and bake for 18-20 minutes or until a toothpick comes out clean.
  6. While the cupcakes cool, prepare the buttercream by beating the softened butter until creamy. Gradually add the powdered sugar and heavy cream, mixing until smooth.
  7. Once the cupcakes are completely cool, frost them with the buttercream.
  8. Melt the chocolate chips in a microwave or double boiler and drizzle over the frosted cupcakes.
  9. Garnish with additional strawberries if desired.
