Ingredients

  • 1 cup chocolate cookie crumbs
  • 2 tablespoons sugar
  • 4 tablespoons unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup cocoa powder
  • 1 cup cherry pie filling


Instructions

  1. Preheat the oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix chocolate cookie crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of each cupcake liner to form the crust.
  4. In a separate bowl, beat the cream cheese until smooth, then add sugar and vanilla, mixing well.
  5. Add eggs one at a time, mixing after each addition, then stir in sour cream and cocoa powder until smooth.
  6. Pour the cheesecake batter over the crust in each liner, filling them about 2/3 full.
  7. Top each cupcake with a spoonful of cherry pie filling.
  8. Bake for 20-25 minutes or until the centers are set.
  9. Allow to cool completely before serving.

  • For a richer flavor, use dark chocolate cookie crumbs.
