Description

A flavor-packed breakfast sandwich with smoky chipotle, hearty sausage, and fluffy scrambled eggs on a buttery brioche bun.


Ingredients

  • 1/2 cup mayonnaise
  • 1-2 chipotle peppers in adobo sauce, minced (plus 1 tsp of the sauce)
  • 1 tsp lime juice
  • 1/4 tsp garlic powder
  • 2 brioche buns (split)
  • 2 sausage patties
  • 4 large eggs
  • 2 tbsp milk
  • 2 slices cheddar cheese
  • 1 tbsp butter
  • Salt and freshly ground black pepper (to taste)


Instructions

  1. Combine the mayonnaise, minced chipotle peppers, adobo sauce, lime juice, and garlic powder in a small bowl. Whisk until fully combined and smooth. Set aside.
  2. Place a large skillet over medium-high heat. Add the sausage patties and cook for 3–4 minutes per side until browned and cooked through. Transfer to a plate.
  3. Reduce the heat to medium. Spread butter on the cut sides of the brioche buns. Place them cut-side down in the skillet and toast for 1-2 minutes until golden brown and crisp. Remove from the skillet.
  4. Whisk together the eggs, milk, salt, and pepper in a separate bowl. Melt the remaining butter in the skillet over medium-low heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are soft and fluffy. Be careful not to overcook.
  5. Spread a generous amount of the prepared chipotle aioli on both halves of the toasted buns. On the bottom bun, layer a sausage patty, half of the scrambled eggs, and a slice of cheddar cheese. Place the top bun on and serve immediately.

Notes

For a vegetarian option, replace sausage with a meat substitute or extra vegetables. Customize the aioli by adding herbs or spices.
