Description

A delicious and easy-to-make chicken salad sandwich that is perfect for lunch or a light dinner.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup mayonnaise
  • 1/4 cup celery, diced
  • 1/4 cup red grapes, halved
  • 1/4 cup walnuts, chopped
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 4 slices of bread
  • Leafy greens (optional)

Instructions

  1. In a large bowl, combine the shredded chicken, mayonnaise, celery, grapes, walnuts, and Dijon mustard.
  2. Mix well until all ingredients are evenly coated.
  3. Season with salt and pepper to taste.
  4. Toast the bread slices if desired.
  5. Spread the chicken salad mixture onto two slices of bread.
  6. Add leafy greens if using, then top with the remaining slices of bread.
  7. Cut the sandwiches in half and serve immediately.

Notes

  • For a healthier option, use Greek yogurt instead of mayonnaise.
  • Feel free to add other ingredients like apples or cranberries for extra flavor.
  • This chicken salad can be made ahead of time and stored in the refrigerator for up to 3 days.
