- 1 whole chicken, cut into pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup tomatoes, diced (or 1 can of diced tomatoes)
- 1 cup chicken stock
- 1/2 cup white wine
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup mushrooms, sliced
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Heat olive oil over medium heat in a large pot. Add the chicken pieces and brown on all sides.
- Remove the chicken and set aside.
- Add the onion and garlic to the same pot; sauté until softened.
- Stir in the tomatoes, chicken stock, wine, thyme, basil, salt, and pepper. Bring to a simmer.
- Return the chicken to the pot, cover, and cook for about 30-40 minutes, or until the chicken is cooked through.
- Add the mushrooms in the last 10 minutes of cooking.
- Garnish with fresh parsley before serving.
