- 4 cups chicken broth
- 1 pound cooked chicken, shredded
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced onion, garlic, carrots, and celery. Sauté until the vegetables are tender.
- Stir in the thyme and rosemary, cooking for an additional minute.
- Pour in the chicken broth and bring to a boil.
- Add the shredded chicken and gnocchi, cooking until the gnocchi float to the top.
- Stir in the spinach and heavy cream, cooking until the spinach wilts.
- Season with salt and pepper to taste before serving.
Notes
- For a lighter version, substitute heavy cream with half-and-half.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- Gnocchi can be replaced with pasta if preferred.
