Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups chicken broth
  • 1 pound cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion, garlic, carrots, and celery. Sauté until the vegetables are tender.
  3. Stir in the thyme and rosemary, cooking for an additional minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the shredded chicken and gnocchi, cooking until the gnocchi float to the top.
  6. Stir in the spinach and heavy cream, cooking until the spinach wilts.
  7. Season with salt and pepper to taste before serving.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Gnocchi can be replaced with pasta if preferred.
