Ingredients

- 2 cups cooked chicken, shredded
- 2 cups crispy rice cereal
- 1 cup mixed fresh vegetables (e.g., bell peppers, carrots, cucumber)
- 1/4 cup peanuts, chopped
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Combine in a large bowl the shredded chicken, crispy rice, and mixed vegetables.
- Whisk together in a separate bowl the peanut butter, soy sauce, rice vinegar, honey, sesame oil, salt, and pepper until smooth.
- Pour the peanut dressing over the chicken mixture and toss until well coated.
- Top with chopped peanuts before serving.
- Enjoy immediately or store in the fridge for meal prep.
