Chicken Carrot Salad

Description

A refreshing and nutritious salad combining chicken and carrots for a healthy meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, grated
  • 1/2 cup celery, chopped
  • 1/4 cup raisins
  • 1/4 cup Greek yogurt
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken, grated carrots, chopped celery, and raisins.
  2. In a separate bowl, mix the Greek yogurt and lemon juice until smooth.
  3. Pour the yogurt mixture over the chicken and vegetable mixture.
  4. Toss everything together until well combined.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For added crunch, consider adding chopped nuts.
  • This salad can be served on a bed of greens for extra nutrition.
