Description

A delicious and healthy chicken burrito casserole perfect for spring dinners.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cups cooked brown rice
  • 1 cup shredded cheese (dairy-free if needed)
  • Fresh cilantro for garnish


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, cumin, and chili powder.
  3. Stir in the cooked brown rice until well mixed.
  4. Transfer the mixture to a greased casserole dish and spread evenly.
  5. Top with shredded cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let it cool for a few minutes before serving.
  8. Garnish with fresh cilantro before serving.
