Ingredients

  • 1 can (15 oz) black beans or pinto beans
  • 1 cup corn (canned or frozen)
  • 2 cups ready rice (microwaveable or cooked)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Taco seasoning (to taste)
  • Salt and pepper (to taste)
  • Fresh cilantro (for garnish, optional)


Instructions

  1. Brown the ground beef in a large skillet over medium heat until fully cooked. Drain excess grease.
  2. Add the canned beans, corn, and taco seasoning to the skillet, mixing well.
  3. Stir in the ready rice and cook until heated through.
  4. Sprinkle the shredded cheese on top and cover until melted, about 2-3 minutes.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh cilantro if desired, and serve hot.
