Description

A delicious and comforting recipe for cheesy potato burritos that are perfect for any meal.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large flour tortillas
  • 1 tablespoon olive oil


Instructions

  1. Boil the diced potatoes in salted water until tender, about 15 minutes.
  2. Drain the potatoes and return them to the pot.
  3. Add the cheese, sour cream, garlic powder, onion powder, salt, and pepper to the potatoes. Mash until well combined.
  4. Heat olive oil in a skillet over medium heat.
  5. Place a tortilla in the skillet, add a generous amount of the potato mixture, and fold the tortilla over.
  6. Cook for 2-3 minutes on each side until golden brown and crispy.
  7. Repeat with remaining tortillas and filling.
  8. Serve warm with your favorite salsa or toppings.
