Description

Delicious and moist carrot cake bars topped with creamy cheese frosting, perfect for spring gatherings.


Ingredients

Scale
  • 1 box carrot cake mix
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup shredded carrots
  • 1/2 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a large bowl, combine the carrot cake mix, vegetable oil, and eggs. Mix until well combined.
  3. Fold in the shredded carrots and walnuts if using.
  4. Pour the batter into the prepared baking pan and spread evenly.
  5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. While the bars are baking, prepare the cream cheese frosting by beating together the softened cream cheese and butter until smooth.
  7. Gradually add the powdered sugar and vanilla extract, mixing until creamy.
  8. Once the bars are cooled, spread the cream cheese frosting on top.
  9. Cut into squares and serve.
