- 1 box carrot cake mix
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup shredded carrots
- 1/2 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- In a large bowl, combine the carrot cake mix, vegetable oil, and eggs. Mix until well combined.
- Fold in the shredded carrots and walnuts if using.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- While the bars are baking, prepare the cream cheese frosting by beating together the softened cream cheese and butter until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until creamy.
- Once the bars are cooled, spread the cream cheese frosting on top.
- Cut into squares and serve.
