Description
A delightful pasta dish featuring caramelized onions and zesty chili oil, perfect for busy weeknights and gatherings.
Ingredients
Scale
- 12 oz Pasta (your choice; use gluten-free for a gluten-free option)
- 2 medium Onions (sweet varieties preferred; can swap with shallots)
- 3 tablespoons Chili Oil (adjust to preferred heat level)
- 1 cup Cream (heavy cream or coconut cream for dairy-free)
- 3 cloves Garlic (minced)
- Olive oil (for cooking)
- Salt and pepper (to taste)
Instructions
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to package instructions until al dente. Drain the pasta, reserving about 1 cup of the pasta water.
- Slice the onions thinly for even caramelization.
- Heat a large skillet over medium heat and add a tablespoon of olive oil.
- Add the sliced onions to the skillet and stir to coat in the oil. Cook for about 15-20 minutes, stirring occasionally, until caramelized.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the cream and add chili oil. Mix well and bring to a gentle simmer.
- If needed, gradually add a bit of reserved pasta water to loosen the sauce.
- Fold the cooked pasta into the sauce and toss until evenly coated.
- Season with salt and pepper to taste and serve immediately.
