- 2 cups sushi rice

- 1/4 cup rice vinegar

- 1 avocado, sliced

- 1/2 pound imitation crab meat, shredded
- 2 sheets nori, cut into strips
- Sesame seeds for garnish
- Soy sauce for serving
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice and let it cool.
- In serving bowls, layer the sushi rice, followed by avocado, cucumber, and imitation crab meat.
- Top with nori strips and sprinkle sesame seeds over the bowls.
- Serve with soy sauce on the side.
