Description

A hearty and comforting soup that captures the flavors of traditional cabbage rolls in a delicious broth.


Ingredients

  • 1 medium head of cabbage, chopped
  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup rice, uncooked
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • Salt and pepper to taste


Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the chopped cabbage and cook for about 5 minutes until it begins to wilt.
  4. Add the diced tomatoes, beef broth, rice, tomato paste, paprika, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for 30-40 minutes, or until the rice is tender.
  6. Adjust seasoning as needed and serve hot.

Notes

  • For a vegetarian version, substitute ground beef with lentils or mushrooms.
