Ingredients

- 1 large head of cabbage
- 4 medium potatoes, diced
- 2 carrots, sliced
- 1 onion, chopped
- 4 cloves of garlic, minced
- 6 cups of vegetable broth
- Salt and pepper to taste

Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, sauté until translucent.
- Add the diced potatoes and sliced carrots, stirring for a few minutes.
- Chop the cabbage into wedges and add to the pot.
- Pour in the vegetable broth and bring to a boil.
