Description

A delicious and comforting pasta dish made with creamy butternut squash sauce, perfect for cozy dinners.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 8 ounces pasta of your choice
  • 1/2 cup vegetable broth
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh sage leaves for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, and pepper on a baking sheet.
  3. Roast in the oven for 25-30 minutes until tender.
  4. While the squash is roasting, cook the pasta according to package instructions.
  5. In a blender, combine the roasted butternut squash and vegetable broth, blending until smooth.
  6. Mix the butternut squash sauce with the cooked pasta, adding Parmesan cheese if desired.
  7. Serve warm, garnished with fresh sage leaves.

Notes

  • For a vegan option, omit the Parmesan cheese.
  • Feel free to add other vegetables or proteins to the pasta for added nutrition.
