Ingredients

  • 1 medium butternut squash, peeled and diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 package (16 oz) gnocchi
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Add the diced butternut squash and vegetable broth, bring to a boil.
  4. Reduce heat and simmer until the squash is tender, about 15 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in the gnocchi and cook according to package instructions.
  7. Once the gnocchi is cooked, stir in the heavy cream and season with salt and pepper.
  8. Serve hot, garnished with fresh parsley.

Notes

  • For a vegan version, substitute heavy cream with coconut milk.
  • Feel free to add other vegetables like spinach or kale for added nutrition.
