- 1 medium butternut squash, peeled and diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 package (16 oz) gnocchi
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Add the diced butternut squash and vegetable broth, bring to a boil.
- Reduce heat and simmer until the squash is tender, about 15 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in the gnocchi and cook according to package instructions.
- Once the gnocchi is cooked, stir in the heavy cream and season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
- For a vegan version, substitute heavy cream with coconut milk.
- Feel free to add other vegetables like spinach or kale for added nutrition.
