- 6–7 ripe peaches, peeled and sliced (or 6 cups frozen)
- 3/4 cup light brown sugar (packed)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 tbsp cornstarch
- Juice of 1/2 a lemon
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup milk (whole or dairy-free)
- Optional: sprinkle of coarse sugar for a crisp top
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, toss peach slices with brown sugar, vanilla, cinnamon, nutmeg, cornstarch, and lemon juice. Let sit 10 minutes.
- Pour mixture into a buttered 9×13 baking dish or cast-iron skillet.
- In another bowl, whisk flour, brown sugar, baking powder, and salt.
- Cut in cold butter until mixture resembles coarse crumbs.
- Stir in milk just until combined. Don’t overmix.
- Drop spoonfuls of dough over the peaches.
- Optional: Sprinkle with coarse sugar.
- Bake 40–45 minutes until golden and bubbly.
- Let cool slightly before serving.
Notes
For extra crispness, brush the topping with milk before baking. Save any excess peach juice for sweet tea. Freezes well for up to 2 months.
