Ingredients

- 2 cups broccoli florets
- 8 ounces pasta (such as rotini or penne)
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside to cool.
- Combine in a large bowl the broccoli, cherry tomatoes, red onion, olives, and feta cheese.
- Whisk together in a small bowl the olive oil, lemon juice, salt, and pepper.
- Add the cooled pasta to the vegetable mixture and pour the dressing over.
- Toss everything together until well combined.
- Chill in the refrigerator for at least 30 minutes before serving. Enjoy!
Notes
For optimal flavor, allow the salad to chill before serving. This recipe can be easily customized with additional vegetables or proteins.
