Ingredients

  • 1.5 lbs chicken thighs
  • 1 can coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 green bell pepper, chopped
  • 1 tablespoon lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion, garlic, and ginger; sauté until the onion is translucent.
  3. Add the chicken thighs, season with salt and pepper, and cook until browned on both sides.
  4. Stir in the bell pepper and cook for another 3 minutes.
  5. Pour in the coconut milk and lime juice; bring to a simmer.
  6. Cover and cook for about 25-30 minutes, or until the chicken is fully cooked.
