Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion, garlic, and ginger; sauté until the onion is translucent.
- Add the chicken thighs, season with salt and pepper, and cook until browned on both sides.
- Stir in the bell pepper and cook for another 3 minutes.
- Pour in the coconut milk and lime juice; bring to a simmer.
