Instructions
- In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet, mixing until just combined.
- Gently fold in blueberries and white chocolate chips with a spatula.
- Cover and refrigerate the dough for 20–30 minutes.
- Preheat oven to 350°F (175°C). Line baking sheet with parchment.
- Scoop dough balls onto the sheet, spacing 2 inches apart.
- Bake for 10–12 minutes, until edges are golden and centers look slightly soft.
- Cool 5 minutes on the sheet before transferring to a wire rack.
Notes
For a brighter flavor, add a little lemon zest to the dough. If using frozen blueberries, add them straight from the freezer to avoid streaking. To store, keep in an airtight container for 3 days or freeze baked cookies for up to 2 months. Reheat in the oven to refresh their texture.
