Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour
  • 1/2 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, combine the rolled oats, almond flour, baking powder, and salt.
  3. In another bowl, mix together the honey (or maple syrup), applesauce, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Gently fold in the blueberries.
  6. Spread the mixture evenly in the prepared baking dish.
  7. Bake for 25-30 minutes or until the edges are golden brown.
  8. Allow to cool before cutting into bars.
