Description

Delicious and creamy blueberry cheesecake bars with a graham cracker crust.


Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a greased 9×9 inch baking pan.
  4. In a separate bowl, beat the cream cheese and sugar until smooth.
  5. Add the eggs and vanilla extract, mixing until well combined.
  6. Fold in the blueberries gently.
  7. Pour the cheesecake mixture over the crust in the baking pan.
  8. Bake for 30-35 minutes or until set.
  9. Allow to cool, then refrigerate for at least 2 hours before cutting into bars.

  • Can substitute frozen blueberries if fresh are not available.
